Preparation time: 30 minutes Cooking time: 5 minutes<\/p>\n<p>ingredients<br \/>\n1kg of sweetbreads<br \/>\n30cl of fluffy gaillac<br \/>\n1 \/ 4L white background of vollaire<br \/>\n100g of butter<br \/>\nSalt &#038; pepper from the mill<\/p>\n<p>Preparation<br \/>\nBlanch the sweetbreads. Peel and squeeze.<br \/>\nFlour them lightly.<br \/>\nHeat the oil in a sautoir, place the sweetbreads and sear them.<br \/>\nDegrease the sautoir and, over low heat, place with the soft wine several times to caramelize the reefs.
